These last few days Ani is introducing some unusual recipes that mix things up a bit from the usual shakes and soups. Most are inventive and tasty. Some miss the mark, I think. Different strokes for different folks I guess, hmmm? Let's get to the recipes for the day.
Since some of these recipes were more involved than others I switched things up a bit. I felt like the shake and soup were a little easier to travel with so I made the Peach Crumble for breakfast. I didn't have peaches so you may notice I made this with apples - so apple crumble, if you will. The crumble portion is pecans and dates along with some sea salt and coconut oil. The apples are tossed with some vanilla and they are put together and yum - at least for the first bite. this would make a terrific dessert. The dates are so, so, so sweet - I just couldn't eat it for breakfast. Yikes! So - great idea and I'll definitely give it an A for dessert but for breakfast food it's probably a C.
For the mid-morning snack we have a Orange Vanilla Shake. In addition to oranges, almonds, vanilla and some green tea. This very refreshing drink is a perfect tangy, sweet morning drink. I give this a solid B+. I'm sorry I forgot to take a picture of my two travelling drinks today.
For lunch we had an Italian Salad. This is an unusual salad minus greens has tomatoes, avocados, black olives, basil, scallions and some herbs. This salad is quite wonderful and I will definitely be making it again. It gets an A from me.
Mid-afternoon snack is Curried Zucchini Cucumber Soup. In addition to zucchini and the ever present cucumbers and miso there's some celery, curry and lemon juice. This soup is a definite winner. Spicy but miso mellow. A definite A from me. Sorry again, no picture.
Lastly, there's the Marinate Mushrooms in Lettuce Wraps. The mushrooms are marinated in soy sauce, agave and sesame oil. The big lettuce leaves are slathered with miso and then layered with the mushrooms, carrots, cucumbers and peppers. Roll it all up and eat. The mushrooms tasted good from the marinade but these lettuce leaves don't hold up to a roll as well as yesterday's collard leaves. Because the leaves fall apart so easily these rolls fall apart faster than you can eat them I give this a C.
